Crispy Broccoli Cheese Bites

Prep Time: 20 minutes
Cooking Time: 25 minutes
Total Time: 45 minutes
Servings: 24 bites
Ingredients:
3 cups fresh broccoli florets, finely chopped
1 cup shredded cheddar cheese
½ cup grated Parmesan
2 eggs or *2 tablespoons ground flaxseed + 6 tablespoons water
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon salt
¼ teaspoon black pepper
Directions:
Preheat Your Oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray. This step ensures your broccoli bites won’t stick during baking.
Scramble 2 eggs or (* Prepare the Flax Egg: In a small bowl, combine 2 tablespoons of ground flaxseed with 6 tablespoons of water. Stir well and let the mixture sit for about 5-10 minutes until it thickens).
Bring a medium pot of water to a boil. Add the chopped broccoli florets and cook for 2-3 minutes until tender but still slightly firm. Drain the broccoli thoroughly, and pat it dry with paper towels to remove any excess moisture.
In a large mixing bowl, combine the cooked and dried broccoli, shredded cheddar cheese, grated Parmesan, garlic powder, onion powder, salt, and black pepper. Pour in the 2 scrambled eggs or the flax egg mixture and stir until all ingredients are well incorporated. The mixture should be sticky and hold together when scooped.
Using a tablespoon or cookie scoop, scoop out about 1 tablespoon of the broccoli mixture and roll it into a ball. Continue shaping until you’ve used up all of the mixture—this should yield approximately 24 balls.
Place the broccoli cheese balls on the prepared baking sheet, leaving a small gap between each one. Lightly spray the tops of the bites with cooking spray or brush them with a bit of oil to help them crisp up while baking.
Place the baking sheet in the preheated oven and bake for 20-25 minutes. Keep an eye on the bites around the 20-minute mark—they should turn golden brown and become slightly crispy on the outside.
Once baked, remove the broccoli bites from the oven and allow them to cool for a few minutes on the baking sheet before transferring them to a wire rack. Serve warm with your favorite dipping sauce.
Tips:
Get Extra Crispy: For even crispier bites, you can flip them halfway through baking, ensuring that all sides become evenly golden.
Make Ahead: You can prepare the mixture in advance and store it in the fridge for up to 24 hours. Simply shape and bake when ready to serve.
Freezing: These bites freeze well! Once baked, allow them to cool completely before placing them in an airtight container and freezing for up to 2 months. Reheat them in the oven until warmed through.
